Barbecued Jackfruit Sandwich (Makes 4 sandwiches)
1 package barbecued jackfruit (I use Upton's)
1/2 red onion
"buns" (I use Osery "one buns")
Cut the onion into rings and cook over medium heat with about a tablespoon of olive oil. When onions are getting softer, add the barbecued jackfruit. Cook until heated through on medium low heat. Prepare your bread by warming it in the oven or toaster. Put desired mayonnaise on both sides of the bread. Cut a half of an avocado in thin slices and put it on one side of the bread. Put a bed of arugula on top. Put the cooked onion and jackfruit on top and you're done...
SUBSTITUTES: Choose any bread but should be a "bun." Can substitute vegenaise for mayonnaise.
Jackfruit Soft Tacos (makes 5 or 6 tacos)
Lightly seasoned or plain jackfruit (I use Upton's)
half a pepper
1/3 of an onion
beans with sauce
lemon or lime (optional)
soft taco tortillas (I use La Tortilla Factory Organic corn and wheat tortillas)
Cut the onion and peppers into strips-not to thick/not too thin. Cook over medium heat until they become softer. Add the jackfruit and cook on medium heat for a few more minutes until it is "dry." Add your beans and sauce. Cook over medium heat until the sauce becomes desired thickness. Turn heat off and add the ancho chile seasoning. Cut a section of green cabbage very thinly to garnish on top. Heat your tortilla in a dry pan until heated through. Put desired amount on tortilla and put cabbage on top. Squeeze some lemon or lime on top.
SUBSTITUTES: Vegetables can be squash or tomatoes substituted for peppers and onions or included with peppers and onions. Can add avocado. Choose corn or flour tortillas but make sure you don't cook the corn one much or it will be extremely chewy. I suggest steaming it. You can choose any pinto/black beans but make sure there is a sauce included or you can make a sauce with the Simply Organic spice packs. There are also jarred enchilada sauces.
Dried Jackfruit Fruit Soup (makes enough for 2 people)
half an orange
coconut palm sugar
6-10 pieces dried jackfruit
cream or whipped cream (optional)
Take the strawberries and put them into a blender. Add a generous squeeze of one half of the orange. Add a little water. Blend until soupy (may need to add more water) Cut the orange and apple into thin slices. Heat up a generous pat of butter in a small pan and add the jackfruit-stir, and then the sliced fruit. Cook on medium heat until apples start to brown (about 5 minutes) Add the "soup" and cook for one minute on medium heat uncovered then turn to low and cook for 5 minutes covered. Add a little less than a teaspoon of coconut palm sugar and stir. Heat uncovered until desired soupiness. Serve with cream or whipped cream on top.
SUBSTITUTES: For the base you can use mango or apricot instead of strawberry. For the fruit you can use pears, pomegranate or apricots.
