In my latest video, I tell my first story while making Cannellini bean salad! I talk about how I moved to Los Angeles in my late 30's to pursue my dream of doing music. I am hoping that this story will inspire someone out there to take the steps in their life to try to make that giant leap of faith...
Cannellini Bean Salad Recipe!
2 boxes organic cannellini beans well drained
6 sundried tomatoes soaked in enough boiling water to cover (soak until soft)
celery, onion, cucumber to taste (can substitute shredded carrot, avocado, tomato or a variety of vegetables)
olive oil
salt
pepper
paprika
all purpose seasoning
Cut vegetables finely and add to beans. Add a tablespoon of olive oil and salt and pepper to taste. Add a generous sprinkling of paprika (paprika is not spicy) Add an all purpose italian or herb seasoning. I use Braggs no salt seasonings. In a blender, blend your sundried tomatoes with enough water to make a sauce and add. Stir it well and enjoy!
