My recent youtube video is all about foraging for eucalyptus and some really awesome home uses and recipes! I venture out near my home in Los Angeles and collect the "dollar tree" eucalyptus leaves and make different teas, a respiratory steam, dye for clothing and a cocktail called the "Koala Mojito!"
Directions for the "Koala Mojito"
Ingredients:
unflavored rum (dark or light)
1 lime
eucalyptus simple syrup (see directions below)
sparkling water or soda water
ice
8 mint leaves
Directions:
take your mint leaves and put them in a glass. add half a shot glass of eucalyptus simple syrup. Muddle for a couple minutes. Add a shot glass of lime juic and mix with an ice cube. add a shot and a half-2 shots of rum. Mix. Transfer to a glass with one large ice cube or crushed ice. Top with a generous splash of sparkling water. Garnish with eucalyptus leave.
Eucalyptus Simple Syrup:
Ingredients:
6 medium sized eucalyptus leaves
one cup sugar (I use coconut palm sugar)
one cup water
Directions:
Heat the water until simmering. Add the sugar and stir until dissolved. Add the eucalyptus leaves and simmer rigorously until syrup starts to form (5-8 minutes) You want the consistency of thin maple syrup. Transfer to blender and blend until eucalyptus leaves are pulverized. Transfer to a container and let completely cool before use.
